Natural Colors for Baked Goods/Cereals/Snacks

The color of a baked good, cereal or snack is an indicator to consumers of freshness and quality. However, achieving a particular hue or shade can be challenging. Factors including ingredients, pH, processing and packaging can effect how a natural color will express in a food system. It is important to rely on your natural color supplier to provide you with the best solution for your specific application.

When coloring baked goods, cereals and snacks, often a yellow, orange, or red-orange hue is desired. Kalsec® Oleoresin and Aquaresin® Annatto, Turmeric, Paprika and Carrot and blends of these pigments will provide a wide range of shades in the yellow to orange range.

Selection of the optimum color formulation depends on the food being colored. Water soluble colors are most appropriate when the color is being added to batters, cereal mash or metered into the blend. Oil soluble formulations are typically used when the color is dry plated onto a carrier, for example in the preparation of snack coatings or when added to the oil or fat component of the food.
